Roasted Greek Salad


Delicious and Deeply Satisfying

I feel so good after eating this salad.

Set the oven to 400 ℉

In a roasting pan place chopped up,

onion

bell pepper

tomato

garlic

carrot

celery

olives

the veggies vary depending on what I have

in the middle of the pan place a block of feta

then drizzle it all in olive oil salt and pepper

before placing it in the oven cut up a lemon and place the two lemon halves in the roasting pan with the veggies


After 25 minutes or when the veggies are cooked remove from the oven

Once the lemons have cooled a bit squeeze the lemon juice into a seperate bowl

to the lemon juice add,

olive oil

thyme

dill

garlic

salt and pepper

Mix and this is the dressing

Add fresh crunchy cucumbers to the salad and then pour the dressing over and enjoy this Roasted Greek Salad!

I love serving with rice.
