Chicken Salad Inspired by South Carolina


One of my favorite go tos.

Delicious by itself or on a bed of greens but my favorite is to enjoy this on toasted bread.

To help with prep and cost, I get a rotisserie chicken from my local Co-Op. I can get a pasture raised organic rotisserie chicken for way less than I can get a raw organic pasture raised chicken.

In a bowl I make the sauce,

  • Apple Cider Vinegar

  • Stone Ground Mustard

  • Relish or Chopped Pickles

  • Garlic Powder

  • Dried or Fresh Dill

  • Mayo

Then I chop up,

  • Chicken (I do one whole chicken)

  • Celery (I do one head)

  • Pecans or Almonds

  • Dried Cranberries

    Add these to the bowl and mix it up. The ratio of all the ingredients is up to you, but I like a lot of all of it. The key for me is to get a little of bit of all the textures in each bite.

I love making a huge batch of this salad and having it for many meals on top of lettuce or on toasted bread. It travels really well as a sandwich.
